What a caterer needs before quoting

  • Date and guest count, even approximate. Both move a quote further than the menu does.
  • The venue, and whether it has a working kitchen or whether everything arrives in a truck.
  • Service style — passed canapés, stations, family-style, plated. This is the single largest driver of staff numbers, and therefore of cost.
  • Anything fixed: dietary requirements, whether there is a bar, and any finish time the venue or the town imposes on you.
